Fritters are a tricky business, in my experience. They aren't burgers, so the ingredients won't form a patty necessarily. You also don't want to use so much flour or binder that you end up with a hush puppy or a funnel cake-like batter with just a hint of veggies. But, if they fall apart, you go from fritter to hash, which is a different animal. The trick seems to be using just enough egg, flour, or cheese (or, as in this case, all three) to get the veggies to stick together without masking the produce that should stand out.

Brussels sprouts are my favorite and in season now, so I want M to love them as much as I do. He'll eat them roasted when they're right out of the oven (who wouldn't eat something crispy and salty fresh out of the oven?), but he won't eat them as leftovers. I tried fritterizing them instead and have had more luck. I also added some bacon because, bacon.

A couple of notes: These guys are still a smidge delicate. Two keys for my fritter success have been making sure that the oil is hot before starting the cooking and letting the first side get a good seer before flipping. I also have to manage my expectations that they'll stick together entirely. And lastly, the smaller the fritter, the more likely you'll flip without breaking. BUT, if this all seems like too much, just throw half or all of the mixture (depending on the size of your pan) into an oven-safe pan and make one or two giant fritters, cooking them like a frittata.

Brussels sprout fritters

12 oz brussels sprouts, shredded
8 oz purple cabbage, shredded
5 slices bacon, cooked crisp and crumbled
4 eggs, lightly whisked
½ cup + 2 Tbsp garbanzo flour*
½ cup + 2 Tbsp parmesan cheese
2 large cloves garlic, minced
S/P
4 Tbsp olive oil, divided (more, if needed)

*I used garbanzo flour because I had it and it has more protein, iron, and fiber than white flour and is gluten-free. But swap in whatever flour you have on hand.

Heat a large pan over a medium flame and add the bacon when hot. In the meantime, shred the brussels sprouts and cabbage with your food processor or by hand, pausing a few times to check the bacon and flip it over. (Or, if you’re smarter than me, and you bought your veggies pre-shredded, dump them in a large bowl and gather your other ingredients.) When the bacon is crisped, let it cool on a paper towel for a few minutes and crumble it into the veggies.  Pour off the bacon grease and wipe down the pan.

In a small bowl, combine the flour, parmesan cheese, minced garlic, salt, and pepper. Dump them onto the veggies and stir to combine. In that same small bowl that’s now empty, add the eggs and lightly whisk with a fork to break up the yolks. Add to the veggie, flour, and cheese mixture, and stir again to combine, making sure that everything is well distributed.

Heat 1 Tbsp of olive oil over a medium flame until very hot. Test with a bit of the veggie mixture to see if it starts bubbling immediately. If yes, your pan is ready. Using a large spoon or your hands, add mounds of about 1/3 cup of the veggies into the oil (our large pan accommodated 4 fritters at a time). Fry for 5-6 minutes until there’s a good seer on one side. Carefully flip (I use a silicone spatula and a fork) and repeat on the other side. Remove from the pan and drain on a paper towel.

Yield: 16-18 fritters

Guys, Friday happened. I'm still in denial and I can't have wine for 6 MORE DAYS. Why did I do a Whole 30 now? I'm talking about the inauguration of DJT, obviously. A more thoughtful post is in the works, but I couldn't write about food without mentioning the thing that has occupied my brain for the past week.

For me, one of the things I like about having a child is that his needs are so immediate that caring for him forces me to be in the moment much more than I ever was pre-parenthood. That required compartmentalizing has gotten me through the past few days. I feel this way about cooking too. It's an activity that forces me to pay attention and helps me to block out the worry that can sometimes drag me into its vortex.

So, it'll be an active four years in my kitchen.

No doubt, I'll be making this Thai green curry fish stew A LOT. It's a very delicious vehicle for vegetables and while not technically "hiding" them, the vegetables become part of a whole and don't taste like themselves necessarily. When M was a baby, one of his favorite purees from Baby Foode was chicken, carrots, mango, and Thai red curry paste, so he's always liked these flavors.

This version of Thai curry is not at all traditional and is also technically more of a soup than a stew because there's a lot of sauce. But to me, that's the best part, so I'm not complaining. If you're doing a Whole 30 or are just curious about what's in your food, check your labels because not all Thai curry pastes are created equal. Thai Kitchen brand is definitely Whole 30 compliant.

And don't be scared of kohlrabi. If you can't find it, cabbage or broccoli stalks are the closest substitutes and also the closest in taste. You can eat kohlrabi raw, sauteed, boiled, or roasted and it's available in most grocery stores and farmer's markets. Here is a great description of what kohlrabi is and some suggestions about what to do with it.

A note about stock: Read carefully because we've only found one brand that is Whole 30 compliant. We could make it ourselves, but stock is one food prep area where I get REALLY lazy, largely because we have a store around the corner that makes homemade stock that is cheap, Whole 30 compliant, and really really good. And then I don't have to handle a whole raw chicken again. Bully for me.

Green curry fish stew

½ large onion, chopped
3 cloves garlic, minced
1 Tbsp olive oil
2 cup fish stock (or chicken/vegetable stock or water if you can't find a Whole 30 compliant stock)
1 can full-fat coconut milk
5 Tbsp Thai green curry paste (or just go ahead and use the entire little bottle)
1 pint mushrooms, chopped
1 bunch baby broccoli (if using regular broccoli, use 6 oz or about 2 cups)
1 medium kohlrabi bulb, chopped
2 cups raw baby spinach (1 cup frozen)
1 lb white fish (thawed, if frozen)
2 Tbsp fish sauce
Cilantro for garnish

Heat oil over a medium flame and add onion and garlic, cooking until the onions are opaque, about 3 minutes. Add the chopped mushrooms and cook until they start to wilt a bit, about 5 more minutes. Add the baby broccoli and cook for one minute. (I removed the long stems because they didn’t fit into my pot, but you can absolutely leave them on or cut them up into chunks.)

Add the coconut milk and the fish stock and bring to a boil. Add the spinach, kohlrabi, and fish and bring back to a boil (this only takes a minute). Push the fish down to make sure it's covered by the cooking liquid.

When the pot is back to a boil, reduce heat to low, cover, and let simmer until the fish is flaky. I had extremely thin slices of cod, so this only took about 8 minutes, but if your fish is thicker, it will take longer. When the fish is cooked, stir in the fish sauce and sprinkle with cilantro.

Makes 7-8 cups, which was about 4 adult servings and 2 toddler servings

Chocolate banana reindeer pops

The treats train has not slowed down since Halloween and we still have a month to go until we all resolve to stop eating like there's a food shortage coming. But thankfully, we can feel full of holiday spirit, and not junk with these chocolate-covered banana reindeer. I tried this with a few different types of fruit, and bananas worked better than apples, strawberries, or grapes.

These treats are also easy to make allergen friendly. Melted carob worked just as well as regular milk, dark, and white chocolates. I used spelt pretzels because this ancient grain is easier to digest than regular wheat and the Happy Herbert brand's ingredient list is blissfully straightforward. However, there are many types of gluten-free pretzels out there that would make a good substitution. The coconut oil that thins out the chocolate also makes these frozen pops a little tropical, which reminds me that there are warmer days ahead. Eventually.

Chocolate banana reindeer pops

2 large bananas      
12-14 thin wooden popsicle sticks
Mini pretzels
Chocolate chips (milk, dark, white, carob, or dairy-free chips https://enjoylifefoods.com/our-food/baking-chocolate/chocolate-for-baking-mini-chips/

Cut each banana into thick slices (you should get about 6-7 slices from each large banana). Snap 12-14 pretzels in half and remove the middle nubbin.

Stick the ends of each pretzel into the sides of the banana pieces to make antlers. Stick a wooden popsicle stick into the bottom of the banana slice. Place all bananas with antlers and sticks onto a parchment-lined baking sheet and freeze for at least one hour, but up to one day.

Once the bananas are frozen, combine ½ bag of your preferred chocolate with 2 Tbsp unmelted coconut oil in a large bowl and melt in the microwave. Cook for 30 seconds on high and then in 10 second bursts until liquid, stirring between each burst. Let cool for 10 minutes. Remove the bananas from the freezer one by one and dip in the melted chocolate. Tap off the excess and, using a small plate, transfer back to the baking sheet in the freezer and repeat with the other frozen bananas.

Let the covered bananas freeze for at least one hour, but up to five days before serving.

Yield: 12-14 banana reindeer

There is nothing more to these sweets than making a batch of Rice Krispy treats, letting it cool slightly, and topping it with cut up or squished up candy.

Not only are these fun for parties or special occasions, they’re also a good project for rainy days with kids of basically any age. With a lot of direction, but 2-year-old was able to help and my 7-year-old could almost make these himself.

These also make a really fun egg and gluten-free treat that can help kids with allergies to feel included. You can also swap in vegan butter to make these dairy-free. Obviously, check your candy and marshmallow labels if allergies are part of the equation.

You'll need:

3 Tbsp butter
6 cups Rice Krispies
10 oz large marshmallows or 5 cups mini marshmallows

Melt the butter in a large saucepan. Add the marshmallows and melt, stirring frequently. When the marshmallows have mostly lost their shape, add Rice Krispies and stir to coat.

Let cool until the mixture can be handled.


Fruit rollups
Large Swedish fish
Hi-Chew candies, Mike n’ Ikes, gummy bears, gummy worms or any other candy you can cut up into tiny pieces
Starburst
Orange sprinkles (either sanding sugar or sugar pearls, but not jimmies)

Tools:

Water
Sharp knife
Pizza cutter

To assemble:

For the rolls: Cut up some Hi-Chews or Mike ‘n Ikes into small bits. Cut the fruit rollup into 1-inch strips. With wet hands, roll a small handful of the Rice Krispy mixture into a ball. Wrap the fruit rollup strips around the outside and squish the top and bottom of the bottom of the circle down a bit. Take a few pieces of the cut up candies and squish them into the Rice Krispies at the top of the roll.

For the pieces: Unroll a fruit roll and cut into 1/2 inch strips with the pizza cutter. With wet hands, roll a small handful cereal mixture into a ball and squish into more of a rectangle. Top with a Swedish Fish and wrap a strip of fruit roll around the whole Swedish fish/cereal combo. Secure the ends of the fruit roll strip with a few drops of water.

For the roe pieces (not pictured): Unroll a fruit roll and cut into 1-inch strips. With wet hands, roll a small handful cereal mixture into a ball and squish into more of a rectangle. Wrap a strip of fruit roll around the outside of the cereal mixture and secure the ends of the strip with a few drips of water. Let dry for a few minutes. Pick up the entire piece and dip the top into 2-3 Tbsp of orange sanding sugar OR top with orange sugar pearls.
